Firstly: Blend the below base ingredients in a high-powered blender or food processor until reaches consistency of cookie dough. Place the base evenly in a baking tray lined with baking paper. Sit in fridge whilst making middle layer.
Base:
½ cup of desiccated coconut
½ cup of oats
8 dates
3 tbsp coconut oil
½ cup of almonds
Secondly: Blend the below first layer ingredients in a high-powered blender or food processor to form the soft berry layer. Place the first layer evenly on top of the base in the baking tray.
First layer:
1 cup of cashew nuts
¼ cup maple syrup
1 cup of frozen mixed berries
2 tbsp of coconut oil
½ tsp of vanilla extract
3 dates
½ an avocado
3 tsp of Maaemo Inner Radiance
Thirdly: Melt the below ingredients in a saucepan on low heat until they form a combined chocolate sauce. Pour the chocolate sauce evenly over the first berry layer.
Chocolate layer:
2/3 cup of coconut oil
1/3 cup of cacao powder
4 tbsp maple syrup
Put in freezer to set for approximately 6 hours. Enjoy
(always store leftovers in freezer)
